Chicken Recipes!

Chicken Soup With Mushrooms and Barley 

Makes 4 servings, 2 cup serving

Ingredients:

2 tsp Butter 
1 Pound White Mushrooms, coarsely chopped
2 Diced Carrots
2 Celery Stalks chopped
4 Cups of low sodium Chicken broth
2 Cups water
1 Cup quick cooking Barley
1 tsp Salt
1 tsp Pepper
1 cups chopped Chicken breast
1/4 cup of Chopped fresh Flat Parsley leaf
2 Whole Green Onions Sliced
3 tbsp Grated Parmesan cheese

Directions:

1) Melt butter in sauce pan, add mushrooms, carrots, & celery, cover and cook, (Stirring occasionally ) until mushrooms are soft, about 5 minutes.
2) Add in Broth, water, barley, salt and pepper. Bring to a boil simmer, covered until the barley is soft, about 15 min.
3) Stir in Chicken, parsley, simmer about 2 min.
4)Top with green onions and parmesan cheese,
5) Serve and Enjoy

Summer Salads!

With the Fantastic heat of the summer sun, it can be too hot to do much of anything, including slaving over a hot stove or BBQ to cook dinner for your family. There are so many great ways to make a beautiful salad. The possibilities are endless, and it just depends on your tastes really!!! Try adding some fruit to your "veggie" salads, and watch them transform into something really great!!!

Spinach Salad Supreme: A twist on the usual Spinach Salad!!

Creamy Cucumber Salad: A creamy flavourful salad!

Cool Cucumber Salad: A very refreshing tasting salad!

Sweet Mango & Green Tomato Relish

Home Made Green Tomato Relish
(PICCALILLI)
Ingredients:

1 peck (12 1/2 lb.) green tomatoes
1 qt. large gherkins Or Sweet Pickles
2 green peppers
4 White onions1 cup salt
2 qt. Cider vinegar
1 cup White Sugar
1 tbsp. Peppercorns
1 tbsp. Celery seed
1 tbsp. Mustard seed
1 tsp. whole cloves

Directions:
A) Chop the tomatoes, gherkins, peppers and onions, mix with the salt and set aside for 12 hours.
B) Drain well, then press to get out all superfluous liquid.
C) Heat the vinegar, sugar and spices, add the chopped vegetables and bring to boiling point.
D) Pack into heated sterilized jars and seal.
E) Process in a boiling water bath for 10 minutes.

The great thing about these recipes, is that they have a great sweetness, it's makes a great addition to your burgers, hot dogs, pork chops, etc! It has a different kind of relish taste, ane even though it has a bit more sugar than most like in their diets, it also has veggies that have great nutritional value. Summer Salads & Dressings

There is nothing better then, having the ability to make your favorite meals,
in the comfort of your own home, and have them taste like they were made by a master chef!
The first thing is that the fresher your ingredients, the better the taste! Try adding these two easy homemade recipes to your romaine lettuce, and enjoy one of the greatest homemade salads you've ever made!

Homemade Caesar Salad Dressing & Homemade Croutons

Ingredients:
1 c. extra virgin olive oil
Use one raw garlic clove or roast it in the oven first, for an extra kick to your dressing.
3/4 c. grated Parmesan cheese
1/2 tsp. salt
1/4 tsp. pepper
1/3 c. lemon juice
2 Eggs, slightly beaten
2 oz Balsamic Vinegar
1 tbsp. Dijon Mustard
2 tsp. Anchovy Paste
Dash Worcestershire Sauce

Directions:
A) Put lemon juice and beaten eggs in blender. Beat well.
B) Add oil, garlic, vinegar, salt, mustard, pepper and Parmesan cheese; blend well.
C) Add dash Worcestershire sauce and the anchovy paste.
D) Blend all ingredients together and store in refrigerator.
E) Serve with Romaine lettuce and top with Homemade Croutons.
